Easy Corn and White Bean Soup

We made some corn and white bean soup when we were playing around with cost effective recipes for larger families. The goal is to create an easy meal prep menu for families who don’t want to spent a ton of time or money to make a delicious meal. This corn and white bean soup was definitely in line with our guidelines for the meal prep.

The ingredients are all under 10$ and the amount of soup that comes from this is roughly 5 meals for our family. I do suggest using our bean biscuits recipe as well since your either already buying or making your own white beans.

We definitely got this one locked down. It took a bit of tweaking from the original recipe we found but I thin this is definitely a good low budget meal. It creates quite a few large bowls of soup, and it taste creamier because of the beans.

I tend to enjoy making my own beans and have found it to taste a bit better. I like being able to layer the flavors of the soup so it really stands out!

What goes in corn and white bean soup?

Of course you have your whole kernal corn and white beans but you need to add some extra vegetables and a nice broth.

The broth is salt, pepper and chicken stock and chipotle peppers which really brings a nice southwestern compounded chipotle flavor with a splash of garlic to liven it up.

You add some cubed bell peppers and onions to add some extra “meat” to your soup to really make it filling and add some flavors and a southwestern feel to it!

You can add anything else that sounds good as well but this is the basic representation of the soup recipe. Have fun with it and make it your own special mix of soup!

How do I make corn and white bean soup?

You want to start by cutting your onions and bell peppers into 1/4″ cubes and transfer them into a pan to saute with some garlic.

Add your broth which will contain chicken broth, chipotle peppers and spices to a large soup pot.

Transfer your sautéed peppers and onions to the broth and add your corn (frozen or canned) and beans (canned or fresh) to the pot and let simmer for 30 minutes or until the taste is right where you want it!

Using the Instant Pot!

Making white beans in the instant pot is very easy. Simply put 3 cups of great northern beans in the instant pot and cover with water add a splash of olive oil (1 tablespoon), and 1 teaspoon of salt to the pot.

Close and set on pressure cook for 25 minutes and allow to self release. You can add other flavors to the beans if you would like, but I have found very few actually transfer flavor.

However garlic is a really good option when making beans, especially fresh or minced garlic!

Powdered spices do not seem to work as well when added to the instant pot but we have tried chopped jalapenos, garlic and broth as the water and have had great success with adding to the flavor of the white bean soup.

You can add all kinds of things to make this soup fancier or more filling. Our goal was to keep it basic and cost effective but here are a few things you can add to make it more special!

  • 1 Cup Chopped Onion
  • 1 Cup Chopped Red Bell Pepper
  • 1 Teaspoon Chopped Garlic
  • 2 Cans Great Northern Beans
  • 6 Cups Chicken Stock
  • 2 Cups Frozen Corn
  • 1 Small Chipotle Chili in Adobo Sauce
  • 2 Tablespoon Salt/Pepper


  • Chop your Onions, Bell Peppers, and Garlic.
    In a large saucepan: Saute your Onions, Garlic, and Bell Peppers in a light amount of oil until tender.
  • Add your chicken stock, beans, corns, chili, and spices.
  • Bring to a boil, reduce and let simmer for 10 minutes.
